Since I've been back at uni, I've completely drawn a line under my healthy eating. They say that healthy food equates to a healthy mind, and so here are two nutritious and affordable food dishes I've prepared. Its great for students, and everything here can be purchased at your nearest Aldi.
The first dish - scrambled eggs (medium, free range) with chopped onion and diced red pepper. I have some Norwegian salmon slices (this tastes especially delicious with cracked black pepper). I also added a mixed leaf salad, with some small tomatoes and a slice of wholemeal bread. I literally just ate this with a side of apple juice and I'm Stuffed The Second dish - spicy mango chicken breast fillet slices (these are pre-cooked, and can also be eaten hot or cold) along with the same mixed leaf salad and tomatoes, followed by microwaveable Mediterranean quiona (it only takes 1 minute to cook too!) It's so easy to go to Mcdonalds or order a take out, but don't you just hate that horrible sluggish feeling you get? Eating lighter, healthier dishes doesn't do that to you! It may be a little more expensive but remember that your body will thank you for it in the long run - and plus it's a fact that food with a higher nutritional value aids your performance and information retainment while you study!
