Overly nice Omlette with a salad side

When you're stumped for lunch, go for a filling omlette. You may notice that most of my food ideas contain eggs - and that's literally because there is just so much you can do with eggs! I use 3 eggs to make my omlette's with no milk. I also add some salt, black pepper, basil, garlic and parsley for flavour. I added about 20 grams of cheese and a handful of diced peppers just to make it taste as amazing as it looks! Throw in a salad to, just to be healthy!

Avocado, sliced lettuce & tomato. I'm using the total 0% yoghurt, which is completely fat free, which I've mixed in with a bowl of yoghurt - as minuscule as this meal looks its surprisingly filling!

CALLING ALL VEGANS & VEGGIES!
So I recently discovered that 'Las Iguanas' - a Mexican restaurant based right here in the UK has a whole menu especially for us Veg heads and even for those of you who are Gluten intolerant! EEEEP. I couldn't wait to share this with you guys. Each dish has an amazing mixture of sweet and infused flavours, with a mild spicy kick. The blend's are amazing. 

Pictured above on the right is my starters. Costing only £4.95, I ordered some 'Empanadas' a Latin version of a pastie, filied with mango and Brie (alternatives are provided for vegans), sided with a sweet chilli salsa!

I demolished my main course in a matter of seconds, pictured on the right is my delicious Enchilada:  "Rolled tortilla with smoky chipotle sauce, filled with roast butternut squash, red peppers, spinach & cheese, on a bed of spring onion rice with refried beans". For £9.95, I was over the moon, because of course we all know I'm tight fisted. (JK)

So my legs are killing me from that workout and I need something quick and cruelty free to eat! Here I scrambled up some vegan mince, with garlic and onion, I added spinach and crispy kale along with some baby rockets and green peppers! yum!

Quick and easy. 
I've warmed a chocolate croissant (80p from tesco bargaaain) and sliced some strawberries to go with it. I've dropped a dollop of fat free yoghurt for dipping and drizzled honey over the top for a sweeter flavour. I'm drinking "Twining's honey and Chamomile" herbal tea.

Vegan Pancakes 
1 1/4 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 1/4 cups sweetened plain soy milk
1 tablespoon maple syrup, plus more for serving (optional)
1/2 teaspoon vanilla
Butter or Cooking Spray
Fresh fruit for serving (optional
 

1. Mix together the flour, baking powder, salt, soy milk and favourings until smooth 

2. Gently pour or spoon mixture and pour onto your hot pan 

3. When the mixture stops bubbling and the edges are brown, flip over to cook other side. 

4. Serve with Toppings and flavourings of your choice

"Breakfast is the most important meal of the day", so why not try something filled with light and nutritious! I'm drinking a 'Tetley's Green Tea' , accompanied by a bowl of Weetabix with "Alpro sweetened Soy Milk". I have also boiled two eggs for that extra protein and sliced a tomato and added lettuce. To finish I have sprinkled basil rather than salt over my eggs for extra flavour. To adapt this to a vegan diet, simply remove the eggs!

     Here you'll find out what and where I'm eating, as well as recipes you can try at home too! My diet is mainly low fat, so you won't have to worry about putting on any pounds after you have stuffed your face!

    Most of you remember that not long ago I was vegetarian. However, due to a variety of reasons I decided to start eating meat again. But don't worry! I'll still be cooking and consuming food to share with you Veggies!
